Depends on how hard you want to work to recover what was thee before.

Whatever is overwritten, is overwritten. But what is not overwritten is
there as raw binary bits. That would make ithard to get something
useful, but not imposible.

Also, it is theoretically possible to get data from the edge of a track.
So, you're new data may hyave overwritten a particular sector, bu the
head probably didn't locate exactly over the area where the previous
write had been. Thus the old data might still be there along the edge of
the new data. This is why these programs overwrite with random bits (or
all zeros) several times over.
