Hello Darragh. As far as configuring packages and personal use software
like Mutt it does not really matter which distribution you use. Sounds
like for now you need to step back and take a deep breath. I just this
week installed a new database virtual email system on my server and it
surely caused headaches but I know in the end it will be worth it. What
I'd recommend is is to maybe get a sample .muttrc file from a friend. As
far as sorting the messages you put in a line like:

set_sort=date

Most configurations for defaults can be found in the master config file.
For example sometimes mutt will have a file called /etc/Muttrc or
something similar. Next, if you have any close friends using certain
distributions I'd recommend going with what they use. No one
distribution is better or worse than each other. In the end it's a
matter of opinion. When I first learned Linux it was on a Slackware 3.5
system. After Slackware I learned Debian, and now am using Fedora Core
3. After using three distros now I have seen each has it's good and bad
points. If you don't know anyone close to you who uses any Linux what so
ever then you will have to rely on your virtual friends here on the
list. I can tell you though, for most answers the answer is right there
in the man page or in the -h parameter of a command line program.
Reading a lot at one time can put you into information overload, trust
me, I've felt that way these last coupld of days reading about postfix
and greylisting emails.

I personally use mutt and love it. I'd be willing to help you out in how
I can but I no nothing next to how Suse lays out their systems. I do
know it uses rpms so that is at least one similarity with Fedora Core.

Cheers.
