Try this:
pdftotext -enc ASCII7 -layout filename.pdf

Also, you can produce HTML by installing the tex4ht package. Then convert the
LateX to HTML, or XHTML+MathML, or ODF and provide that along with the PDF
version.

I would recommend XHTML+MathML as the most inherently accessible destination
format.
