You'll need to install the xpdf package. I haven't tried installing
packages while using the livecd, but since it's a debian-based system,
apt-get install xpdf
should work. Once that's installed, type:
pdftotext file.pdf
, and it will produce a text version of file.pdf in file.txt, in the
current directory. Hth.
