You can still run tasksel and check desktop in the list you find there.  All is
not lost.

As for getting mail from your pop server and sending it through a remote smtp
server, you will need to install fetchmail or getmail.  Either one of those will
retrieve mail from a pop server.  You will also need to configure your local
mail server as a smarthost which will relay the mail you send out to the remote
smtp server of your choice.  Maybe soneone who has done this can point you to
the correct docs to accomplish this, but I can point you to tldp.org and
linuxquestions.org to get you started.
