Bit of a long story with some must see reading but for starters, a
linux box can do the job just fine.  I used to use an old 486 to do my
address translation and in general, it worked prett good.  If using a
2.4 or 2.6 kernel, you would use IP Tables to do the IP Masquerading
and there are several ready made scripts that use ip tables to provide
basic fire wall and packet forwarding functions.  The sky is the limit
as for creativity and flexibility.  I finally gave  up the linux deal
for a dlink router because the bus speeds on the 486 yielded
disappointing transfer speeds for me.  I think it was the combination
of a strait hub and the 486 that hurt me but I went with this router
and my speeds have trippled for large FTP transfers.  

But yes, it is quite easy to get free of windows doing the connection
sharing.  Take a look at the various HOWTOs on the subject of iptables
and ipmasquerading.
