which prebuilt linux boxes seem to work best?

In what way would one install linux on a box like this, serial console is
probably quite usefull, (if I could use it with a parallel to serial
converter with a dectalk express connected to my laptop's real serial
port). Would one just put in the hp supplied CD and do the install by
serial or dialin?
