looking for a "good" accessible linux distro

For building a live CD, I'd recommend looking into live-helper on either 
Debian or Ubuntu.  Once you get the initial live system configured, it's 
extremely easy to update/rebuild the image (2 commands from inside the 
live-helper tree).
