Hi Kenny,

I've read the Ubuntu pages and it says to press f5 to bring up the boot menu
for the blind option.

Yes, but you will probably need to install speech-dispatcher and
speechd-up.  Since they are Ubuntu packages, this won't be a problem.
Speakup is already in the
kernel.  Modprobe speakup_sftsyn will load the softsynth driver.
