Someone posted these three statements to plug into your startup files, 
which will tame it a bit:
setopt singlelinezle
unsetopt prompt_cr
export PS1='%m%# '
Try those, and then you can use the man pages and configuration files in 
/etc/zsh to fine tune the thing.
