As far as USB sticks, ETC, do
mount -t vfat -o uid=xxx,gid=xxx /dev/sda1 /mnt/wherever
Where "uid=xxx" and "gid=xxx" are your username/GID (1000 and 100 in your case). As far as the filesystem check, if you're usin ext3 or ext2 (you're usin gext3 if I remember correctly) there's an option in tune2fs (man tune2fs) for controlin gthe frequency of filesystem checks.
