ps conversion tools?

There are three packages I know and use for postscript/pdf conversion
to text.  Two of them have already been mentioned xpdf (pdf2text) and
ps2ascii part of the ghostscript system.  There is a third one which
works quite nicely as well pstotext.  In debian at least it is it's
own package.
